Les personnes qui reçoivent mes recettes par mail ont dû recevoir il y a quelques jours cette recette…sans aucun texte, juste la première photo. Ce n’était pas une blagounette de ma part, non-non ! Je ne sais pas comment c’est possible, mais j’ai passé 2 heures à écrire ma recette, puis je l’ai sauvegardée pour la publier plus tard… Et au moment de la mettre en ligne : Plus rien !

Donc voilà, aujourd’hui c’est reparti, je recommence… Je ne me rappelle plus vraiment de quoi je vous parlais, sûrement du temps, comme souvent, et de l’automne qui s’installe gentiment. Et en gros je vous expliquais que c’était la première fois que je préparais un tajine (dans mon beau plat tout neuf), et la première fois que je cuisinais des coings. Ah oui, je racontais aussi que les coings sont vraiment un fruit zarbi, qu’on a pas forcément l’habitude de manger, si ce n’est sous forme de pâte de fruits. Et pour changer, j’ai voulu le cuisiner dans un plat salé. Vous ne serez pas déçus par ce tajine, qui est tendre, épicé, avec cette petite touche sucrée qui j’adore dans la cuisine du Maghreb.

I don’t how it happened, but I spent a couple hours writing my recipe, I saved it to post it later… And when I clicked on the Publish button, I realized my whole recipe was gone (except the picture above) !

So today I write it again… I don’t remember what I talked about in the first version. I think I talked about the whether, as always, and about the autumn settling in slowly. And I explained it was the first time I cooked a tajine, in my brand new dish, and also the first time I used quinces ! And yeah, I added that quinces are some really weird fruits, that we’re not really used to cook, except maybe in fruit paste. So I wanted to change, that’s why I cooked it in a savory dish…which I’m sure you’ll love. This tagine is soft, spicy, with a little touch of sweetness.
Il nous faut – What we need :
Pour 4 – For 4 :
Viande de boeuf (gîte ou paleron) : 500 g – Beef (chuck or brisket) : 500 g
Coings : 2 (400g) – Quinces : 2 (about 400g)
Oignon jaune : 1 – Yellow onion : 1
Fenouil : 1/2 bulbe – Fennel : 1/2 bulb
Carotte : 1 – Carrot : 1
Concentré de tomate : 1 c.s. – Tomato paste : 1 tbsp
Poivre noir moulu grossièrement : 1 c.c. – Roughly ground black pepper : 1 tsp
Ras el-hanout : 2 c.c. – Ras el-hanout : 2 tsp
Cumin en poudre : 1 c.c. – Ground cumin : 1 tsp
Gingembre en poudre : 1 c.c. – Ground ginger : 1 tsp
Flocons de piment : 1/2 c.c. – Red pepper flakes : 1/2 tsp
Citron : 1 – Lemon : 1
Persil – Parsley
Sel, Huile d’olive – Salt, Olive oil
Tout le monde est là ? Let’s go ! Everybody’s ready ? Let’s go !
Commencez par émincer l’oignon finement.
Thinly slice the onion.
Faites de même avec le fenouil.
Do the same with the fennel.
Epluchez et coupez la carotte en gros bâtonnets.
Peel the carrot, and cut it in thick sticks. Thick sticks. Thick sticks. Sick Thticks. Ok I stop.
Faites chauffer 2 c.s. d’huile d’olive dans votre plat à tajine. Puis faites revenir les morceaux de viande, jusqu’à ce qu’ils soient dorés sur toutes les faces.
Heat 2 tbsp olive oil in a tajine dish, or in a pot. Throw in the pieces of meat, and let it brown all around.
Réservez la viande sur une assiette.
Remove the beef from the pot and set aside.
C’est au tour des légumes de passer à la casserole : Les oignons, les carottes, le fenouil. Hop.
Now let’s throw in the veggies : Carrots, onion and fennel.
Laissez-les fondre quelques minutes (6-8 minutes).
Let them cook a few minutes, until they’re tender (6-8 minutes).
Ajoutez ensuite les épices : Ras el-hanout, cumin, gingembre, poivre noir. N’oubliez pas de saler également.
Then, add the spices : Ras el-hanout, ginger, cumin, and black pepper. And don’t forget to salt.
On ajoute aussi le concentré de tomates.
Then we add the tomato paste,
Et on mélange… Hmmm…ça sent trop bon. Laissez cuire 5 bonnes minutes.
And stir … The smell is magical. Let it cook 5 minutes or so.
Saupoudrez d’une bonne c.s. de persil haché grossièrement.
Sprinkle on a heaping tbsp of roughly chopped parsley.
Replacez le boeuf dans le plat, et mélangez.
Put the beef in the pot again, and stir.
Couvrez avec 400 ml d’eau. Portez à ébullition, puis baissez le feu.
Pour in 2 cups of water. Let it boil, then the heat on low.
Couvrez, puis laissez mijoter 2 heures.
Put the lid on, and let it stew for 2 hours.
Pendant la cuisson, on va préparer les coings. Remplissez un grand bol d’eau froide, puis pressez-y le jus du citron.
While the tajine is cooking, let’s prepare the quinces. Fill a big bowl with cold water. Squeeze in the juice of the lemon.
Pelez et coupez les coings en 4, épépinez-les, puis coupez chaque quartier en 2. Mettez vite les morceaux dans le bol d’eau citronnée, pour éviter qu’ils noircissent.
Peel the quinces in 4, scoop the seeds, and slice each quart in 2. Quickly put the slices in the bowl of water, so that they don’t turn brown.
Une fois que les coings sont découpés, faites bouillir une casserole d’eau. Plongez les coings dedans, puis baissez le feu et maillez mijoter 20 minutes.
Once you cut all the quinces, boil some water in a pot. Put the quinces in the water, lower down the heat, and let the fruits simmer for about 20 minutes.
Après la cuisson, égouttez les coings, puis ajoutez-les dans le tajine pour les 50 dernières minutes de cuisson (soit après 1h10 de mijotage). Refermez le plat.
Once they’re cooked, drain the quinces, and place them in the tajine dish, for the last 50 minutes of cook (1h10 after the tajine started to stew). Put the lid on again.
Après 2 heures de cuisson, tout a bien mijoté, tout est beau, tendre et parfumé. Si vous trouvez qu’il y a trop de liquide, vous pouvez laisser le couvercle ouvert pendant quelques minutes pour faire réduire la quantité de sauce. Goûtez et rectifiez l’assaisonnement.
After 2 hours of simmer, everything is beautiful, tender and flavorful. If you think there is still too much liquid, open the pot a few minutes, so that the liquid evaporates a bit. Taste and rectify the seasoning.
Servez avec du couscous parsemé d’amandes effilées.
Serve with couscous and almonds.
